Nothing special; just do a recursive copy to your NFS root, e.g.:
mkdir -p /srv/nfs/SLES10
cp -ax /media/dvd/* /srv/nfs/SLES10
As long as all the files are copied and the directory structure is
maintained, it's an installation source. No special setup needed.

Yes; this is the "mini" ISO on the FTP sites. Look for
"SLES-10-i386-Beta10-mini.iso".
